Cordes sur Ciel & Wine Tasting
Cordes-sur-Ciel is a a fortified town in the Tarn department of southern France built in 1222 by Raimon VII, the Count of Toulouse. It is a bastide town built in 1222 to resettle and shelter displaced people after the Albigensian Crusade. This amazing village is perched on a hill, high in the clouds hence its name; Cordes in the sky. After seeing the village and enjoying lunch we will head off to the vineyards for a wine tasting. Gaillac wines are famed for their sparkling and Bordeaux style reds. After a visit to a fabulous chateau with an interesting history we had off to Languedoc.

The city of Albi is built of deep rose coloured brick as is the stunning Sainte Cécile cathedral, a masterpiece of the Southern Gothic style, built between the 13th and 15th centuries built to celebrate the end of the Albigensian Crusade. We will visit the cathedral and next door the Bishops Palace; Palais de la Berbie which is older than the Palais des Papes in Avignon and is now the Toulouse-Lautrec Museum. You will have free time to wander through the medieval streets and after lunch we will head to Languedoc to transfer you to your accommodation.

Wine Tasting in Limoux
This tour includes a visit to the spectacular Domaine Gayda, one of the leading and most impressive wine producers in the area and a place not to be missed! During the visit we tour the state of the art winery and learn how the wines are made and matured and we will enjoy a relaxed and fun tasting of their excellent range of wines. This is followed by a three-course lunch with wine in their superb restaurant that overlooks the Pyrenees. After lunch we take the short drive to the abbey of St Hilaire where the first sparkling wine was created by the monks in 1531. This is a beautiful abbey and we will spend a little time walking through the cloisters and taking a look at the wine cellar and the other historical buildings. Our final visit of the day will be to taste the sparkling wines that the monks made so famous. There are 2 styles of sparkling wines made in Limoux: Blanquette du Limoux and Crémant du Limoux and we will taste both styles as well as the Blanquette Ancestral, that delicious sweet sparkling wine – very unusual and very palatable!
