This fabulous Food & Wine holiday is set in the beautiful medieval city of Carcassonne. Each day you will enjoy a delicious day of tasting that includes local wines and fresh produce, delicious lunches and an optional classic French cooking class.
You will stay in a comfortable and friendly B&B at the foot of the medieval fortress of La Cité in Carcassonne. Its ideally situated to enjoy the many restaurants and lively cafés without walking more than 1 minute from your B&B.
In brief the holiday includes 3 or 4 top class day tours (depending which package you choose) including lunch at spectacular Domaine Gayda, a wine tasting cruise on the canal du Midi, olive oil tasting, market tour and wine tasting at small interesting wineries plus an optional cooking class.

We start the day with a visit to the spectacular Domaine Gayda, one of the leading and most impressive wine producers in the area and a place not to be missed! During our private visit we tour the state of the art winery and learn how the wines are made and matured followed by a relaxed and fun tasting of their excellent range of wines.
Lunch will take place in their superb restaurant that overlooks the Pyrenees and today we will enjoy a 4 course degustation menu enjoying a different wine paired to match each course. After lunch we will visit one of the finest sparkling wine producers in the Limoux appellation where you will discover the 3 different styles of sparkling wines produced in this area including Blanquette Ancestral, a delicious sweet sparkling wine – very unusual and very palatable!
We finish the day with a short drive to the abbey of St Hilaire where the world’s first sparkling wine was created by the monks in 1531. This is a beautiful abbey and we will spend a little time walking through the cloisters and taking a look at the wine cellar and the other historical buildings before heading back to Carcassonne.
Friday September 15th – Canal du Midi Wine Tour
We start this fabulous tour with a visit to one of the best independent olive producers in Languedoc where excellent oils are produced using local olive varieties. We will learn how the olives are grown and harvested and made into oil. This is followed by a tasting of oils and olives including the Rolls Royce of all Olives the Lucques variety.
From here we take the short drive to the village of Le Somail one the prettiest ports along the Canal du Midi where we join our boat for a 1 hour private cruise and along the way we will entertain you with a delicious tasting of Languedoc wines and tell you the story of the Canal.
Lunch will take place at a hidden spot that we particularly love and is the perfect place for one of our gourmet outdoor lunches and afterwards we will visit the beautiful village of Minerve for a short stroll.
We finish our day with a visit to one of the finest wine producers in the Languedoc wines. We will enjoy a private tour of the winery followed by a delicious tasting of their expressive wines.
Saturday September 16th – Corbières Food & Wine Tour
Today we visit the weekly organic market in the ancient covered market in the centre of the pretty village of Lagrasse, one of the ‘Plus Beaux Villages de France’. We begin the day with a beautiful drive into the rugged Corbières region of the Languedoc following the valley road as it winds its way through the wild and rugged landscape to arrive in the ancient village of Lagrasse
Your guide Carlos will take on a stroll through the market and introduce you to many of the stall holders who will explain their various Languedoc produce and how you can prepare and cook them. You will taste the local cheese including the regional traditional goat and sheep milk cheeses plus local honey, olives and olive oils and learn the history behind them. After the market you will take a stroll around this medieval village, along the narrow cobbled ‘ruelles’ and along the way, between the town and the abbey, in squares and behind facades, there are stories to be told and a fascinating medieval history to be revealed. After our foodie stroll Carlos will invite you to eat lunch with him in his medieval house where you will enjoy a home cooked meal made from local and seasonal produce.
Our afternoon visit is to a winery located deep in the heart of the Corbières. You will take a walk through the vines of this family owned estate where wine has been grown and made for centuries. Some of the vines are more than a century old and you will learn how they are tended with great care and hand harvested. We will visit the very traditional winery that is more than 100 years old but these days has been modernised to include the up to date equipment. We will visit the massive cellar room containing over 200 French oak barrels in which many of the wines are aged. Now it’s time for the wine tasting and you will be sampling the entire range of Corbières made at this famous estate which include white, rosé and red. The wines are made from the traditional grape varieties of the south of France.
Sunday September 17th – Classic French Cooking
Have you dreamed of cooking delicious classic French dishes? This unique French cooking class will show you timeless methods and provide you with useful skills and simple tips that will help you to create classic French cuisine with a modern twist!
You will use fresh, locally sourced ingredients, many from the market gardens where this lovely cooking class is located, right on the banks of the Canal du Midi. You will prepare seasonal starters, learn to trim French cuts of meat, poultry and fish. No French cooking course would be complete without the perfect French sauce and of course delicious classic desserts.
