This tour takes place on a Thursday and a Sunday so that we can visit the busy little Saint-Chinian market.
We start the day with a drive into the Saint-Chinian wine region to visit one of the very special, small domaines making some of the most exciting Saint-Chinian wines in the region. This independently owned winery is hoses in an ultra modern building surrounded by ancient vineyards and located close to the village but in a place that feels like the middle of nowhere.
Here you will learn how the vines are hand harvested and brought to the winery and processed in modern cuves using ancient methods. This is where ancient meet modern and you will be fascinated to hear the winemaker describe his wines with such passion.
After a great tasting we will head back into Saint-Chinian where you will have some time to wander the stalls and perhaps buy some local produce. This tour is available in other days of the week on those occasions we will visit a goat farm instead of the market where we will meet the goats and taste the delicious cheese.
Now it’s time for lunch and we head off across the hills to a country Auberge tucked away in a tiny French village for the local speciality of Cassoulet – a white bean stew with duck confit and Toulouse sausage washed down with local wine. Delicious!

After lunch we visit our second winery which is an organic producer located in the Minervois appellation. Here they produce small quantities of top class Languedoc wines made by an award winning female winemaker and great friend of Vin en Vacances. We will take a look at this bijou domaine and the vines growing on startlingly white limestone soils before tasting the delicious range of wines including the sweet Muscat that tastes of honey and fresh grapes and smells of summer roses.
On the way back we have time to see the beautiful village of Minerve and learn about the Cathar siege that took place here in 1210 before heading home.
